Sage Sour

Our favourite One Gin cocktail.We love the addition of the Green Chartreuse to up the herbal notes, but it’s also great without it.

INGREDIENTS

50ml One “Sage” Gin
15ml Green Chartreuse
25ml lime juice
10ml sugar syrup
1 x bouquet garni of basil, sage, mint, rosemary tied together
1 x egg white
5ml olive oil
1 dash of orange bitters

METHOD

Dry shake (without ice) half the olive oil with the other ingredients to combine.Then add ice, shake and double strain into a chilled glass. Garnish with the remaining olive oil, as small drips on the foam.
